Carine Platat is a Professor of Human Nutrition and Chair of the Department of Nutrition and Health at the United Arab Emirates University (UAEU). She holds an Engineer Diploma in Agronomy from the National School of Agronomy and Food Industries (Nancy, France), an MSc in Biology and Human Nutrition from the National Institute of Agronomy (Paris), and a PhD in Biomedical Sciences from the University Louis Pasteur (Strasbourg, France).
Her research focuses on sustainable diets, functional ingredients, and innovative nutritional approaches for improving metabolic health and preventing nutrition-related diseases such as obesity, diabetes, and Metabolic-Associated Fatty Liver Disease (MASLD). She leads the research team “Diet for Future Consumers” at the ASPIRE Research Institute for Food Security in the Drylands, exploring how food choices can promote both human and planetary health.
At UAEU, Prof. Platat teaches nutrition and metabolism courses and contributes to several academic and quality assurance committees. She is also a member of the Emirates Space Innovation Group, collaborating with the Mohammed Bin Rashid Space Center, the Institute of Biomedical Problems (Moscow), and NASA on projects investigating diet, metabolism, and exercise in space. Her work has been published in leading journals including Nutrients, Frontiers in Nutrition, and Food Chemistry.
